Sweet Potato Chicken Chili


This is a spicy, very easy and filling chili that your family will love!

Saute in a large pan ~

1 Tablespoon ghee or olive oil
1 chopped up onion
4 cloves of garlic minced

After ten minutes add ~

2 Tablespoons chili powder
4 teaspoons cumin
1/4 teaspoon salt
2 1/2 cups chicken broth {Homemade is always best!}
2 cans black beans {or make your own}
1 can diced tomatoes
Juice of 1 lime
1/2 cup fresh cilantro
1 large sweet potato chopped up
2 cups chopped up uncooked chicken breasts

Bring to a boil, put the lid on, and simmer until the sweet potatoes 
and chicken is thoroughly cooked.  After serving in bowls, 
you can top with cheese and tortilla chips if you would like.

This inspired me...I am definitely tossing a sweet potato in my crockpot creation for the day, which is amazingly similar to your recipe. Yum! We are big fans of soups, stews, and chili at our house. Maybe we'll make this tonight!
Mmm Mmm! That sounds delicious. And I think I have all the ingredients on hand, except for the lime. :) Definitely must try this one!
