This was the dessert my dad requested for his 80th birthday party and it was great! I found the recipe on the food network but I changed several of the ingredients, like white flour and sugar, to make it healthy and added a few of my own.
Filling~
5 Fuji apples, peeled, cored, and chopped small
1/4 cup finely chopped pecans
3 Tablespoons whole wheat pastry flour
1/2 cup organic sugar
2 Tablespoons maple syrup
1 Tablespoon lemon juice
Mix all the ingredients together and place into an 8 X 8 pan.
Topping~
3/4 cup whole wheat pastry flour
1/2 cup organic oats
1/3 cup organic sugar
1/2 teaspoon cinnamon
1/4 teaspoon sea salt
6 Tablespoons chilled butter, cut into small pieces
1/2 cup coarsely chopped pecans
Mix the flour, oats, sugar, cinnamon, and salt in a large bowl. Blend the butter into the mixture until it forms pea size lumps. Stir in pecans and sprinkle over filling. Sprinkle a little bit of organic sugar over the whole thing.
Bake in a preheated 350 degree oven for 35 to 40 minutes. Cool 10 minutes before serving.
