Simple Homemade Kefir - Powerhouse of Nutrition


Kefir is FABULOUS for your gut!!!  It has made my gut so much healthier. A healthy gut is imperative for a healthy immune system. It tastes a lot like yogurt but regular yogurt only has around five different probiotics, whereas, kefir has over thirteen! I make my own and it is very easy.

Buy a gallon of organic, whole milk.

Pour into a large pan on the stove and heat to a slow, rolling boil, stirring frequently.

Let cool to room temperature.

Add 1 cup of organic store-bought kefir to it and stir well.  
(After the first batch, you will save a cup from this batch for the next batch and so on.)

Pour into quart size mason jars.

Put on the top shelf in the pantry without a lid or in the oven with the light on.

Cover with a light towel.

Let it sit for at least 8 hours. Check after 8 hours and see if it is thick like yogurt. If it is separating, you have it in too warm of a place or have left it too long. If I put it in the oven, it takes 6 to 8 hours. If I put it in the cupboard, I can leave it overnight.

Cover with lids and put in refrigerator. It lasts up to three weeks. Just use as you would regular yogurt. Save one cup of your homemade kefir for your next batch. Eat a 1/2 cup or more a day for good gut health.

Why are you boiling the milk? I've been making kefir for YEARS and have never boiled the milk.

I have just heard it kills any bacteria that may be present in the milk. I have always done it this way.
No need to boil milk. I've been making kefir for ages. I sit my kefir grain in 1-2 cups of organic milk on the countertop in a mason jar with the lid unscrewed and leave for 24 hours. somedays it's thicker than others. If it is separated i strain it through a cheesecloth and use the whey as a starter to get my fermented veggies etc going. Otherwise I blend it all together twice a day with some fresh organic fruit and have myself a smoothie for breakfast and a night time snack.
I would really like to start using this. I live in a tiny little town, and can't find any (or anyone who knows about it, and that includes our "healthfood" store)! I'm trying to order some online, and find starter kits of frozen kefir grain and live kefire grain. the life gets some not so good reviews saying it died during shipping. What do you recommend, and where do you get yours?

Our health food stores carry kefir. I would recommend ordering kefir grains but the way I do it is much easier and has been fool proof for many years.
What's the difference between using kefir yogurt from the store and live kefir grains to begin making your own?

I got my kefir from healthline.cc. If you get it from the store, you have to make sure there are active probitotics in it. It is so much easier to make this way than with kefir grains.
So nutritionally, it's just as effective your way? All tutorials I find online are with live kefir grains.

No wheat in kefir, Laura, just milk.
Mixing the kefir in the hot milk doesn't kill the culture? When making yogurt you have to let the milk cool some so the cultures do t get killed.

Don't put the kefir in the milk until it has cooled down significantly, then you won't kill the culture.
