Hearty Chicken Parmesan

 
  

This is an easy dinner to make if you are feeding a crowd.
It is definitely my family's and guest's favorite dinner!

In a large pan:

Melt one stick of butter.

Take 6-8 boneless, skinless chicken breast
and cut them into long, narrow strips.

Lay in the chicken on top of the butter.

In blender or Cuisinart add:

3 slices of whole wheat bread or my homemade bread

1 cup of Parmesan cheese

1 teaspoon garlic powder

1 teaspoon sea salt

Several stems of parsley or cilantro, if desired

Blend until crumbly.

Spread bread mixture over chicken.

Sprinkle with paprika.

Bake at 350 degrees for 45 minutes. 
If it starts getting too brown, cover with tin foil.

I put this on top of my Homemade Spaghetti Sauce and
whole wheat pasta with some Parmesan cheese.

Mmm Mmm! Chicken Parmesan is probably my favorite food! This version sounds healthier than what I'm used to, and super easy too. Must try this one out for Sunday dinner tomorrow! Thanks!
