There's a lot of confusion today concerning who will and who will not inherit eternal life. Many people have decided to write their own Bible and decide that everyone will be saved from damnation. What does the Bible have to say about this?
That they all might be damned who believed not the truth,
but had pleasure in unrighteousness {2 Thessalonians 2:12}.
For the wrath of God is revealed from heaven against all
ungodliness and unrighteousness of men who hold the truth in unrighteousness…who
changed the truth of God into a lie and worshiped and served the creature more
than the Creator {Romans 1:18, 25}.
Fornicators, adulterers…shall not inherit the kingdom of God
{1 Corinthians 6:9, 10}.

From these verses we learn that those who will not receive
eternal life and be damned are those who know the Truth, yet reject it and
continue to live in sin. Yes, all anyone needs to do for eternal life is to
believe on the Lord Jesus Christ, but faith without works is dead. If you say
you believe, but continue to live contrary to the word of God, you are showing
by your life that you don’t believe. If you truly love the Lord, you will want
to continually be growing in the wisdom and knowledge of Him so you won’t
blaspheme His Word through disobedience.
God’s Word is being watered down by many and they tragically
believe that those who seek pleasure and satisfying their lusts will receive
eternal life. This is a blatant lie and is contrary to what God’s Word says.
There was a great discussion going on in the comment section
of Are Babies Born Sinful? I do believe babies and children will receive
eternal life because their little minds don’t understand the Gospel clearly and
therefore, can’t reject it. As they grow older and learn about it, but continue
to choose to disobey it and instead satisfy their lusts and evil desires, thus
denying the God who created them, then they will be held accountable before God.
If they never repent of their evil deeds, then they are in danger of eternal
damnation.
We must never water down Truth to make it more acceptable in
this wicked generation. We must care more for the souls of those around us since we know, without a doubt, that our soul is safe in the arms of
Jesus. Be bold in speaking truth in love; for God’s Word is powerful, sharper than a two-edged sword, and has the ability to convict and cause others to repent and truly believe through the Holy Spirit's conviction and work in their life. As soon as
someone repents and believes, God’s mighty Spirit enters them and they can then do all things
through Christ who strengthens them!

My pastor says that even a parrot can be taught to say, "Jesus is Lord", but since that parrot has no soul conversion, he is still living carnally (and without the Holy Spirit compelling it to do differently).

My question would be, why do they find it difficult to believe?
Faith has within it the idea of Trust. Can you trust God? Is God worthy of our trust? Is he honest with us? Is He loving towards us? Does He want what is best for us?
We can see this in the Bible. It is a record of God's Trustworthiness. We can also see in the lives of the Saints over the history of the Church. We can also see it in our own lives.
How has God treated us? What can we expect from Him in the future? He will be as He always has been? If we can see His hand in our lives in the past, He will continue to do that in the future.
Why some have a hard time trusting God is that they have a perverted understanding of events in our lives. Why did my loved one die? Why did I lose my position or financial standing? Why did this bad thing happen to me? Was God being unfair with me? I find that people who distrust God always seem to have a reason for it, but never a very good reason for it.
The Bible says, "He that comes to God but believe that He is and is a rewarder of them that diligently seek Him." Heb 11:6
"No good thing will He withhold from them that walk uprightly." Ps 84:11
We must come to the place that we are convinced that God is loving and just at the same time. God wants to provide for every one of His children, exactly what they need to prepare them for their future Home in Heaven. As Children of God, we can ask God for anything and if we don't receive it, it will be either that it was not good for us or we have not walked uprightly before God, according to the verse above.
The more we learn the truth about God the more we will be able to trust Him.

What about all those OT people that died before God's law was given? What about those that die without ever hearing the gospel and thus don't have a chance to accept/reject it? Will they go to heaven too?

We know that all mankind is judged according to our individual deeds, and that is why we need a Savior to stand in our place so that our judgment and punishment falls on him at the cross. It would seem that mankind apart from Jesus will also be judged according to the knowledge they have, but before we start thinking that those who never hear the gospel may be saved for an eternity with a holy God, remember that God says that the evidence for Him is everywhere and has been seen by all, except babies. God says that no man is without excuse because once they see that he must exist by looking at creation, they are responsible to seek Him and live according to the knowledge of God that they have.
So what will happen to the OT people who died before the law a was even given? I don't know, and anyone who claims to have such knowledge is only giving their opinion. Even as their opinion may be based on solid biblical truth, the Bible does not say what happens to all of them. We know that many of them will be damned, and it will be their own actions that damn them. But if priests like Melchisedeck were serving the Most High God before the law came in, there must have been others who carried on the tradition that Adam handed down to his kids and loved and served God, even not fully knowing that their salvation was coming in the form of Jesus Christ.
It is interesting that Paul says, "Do you not know that the saints will judge the world?" (I Cor. 6:2). Unfortunately he does not go on to elaborate this role that we will have either in the Millennium times, or at the end of the age.

So they are without excuse. 21 For although they knew God, they did not honor him as God or give thanks to him, but they became futile in their thinking, and their foolish hearts were darkened. 22 Claiming to be wise, they became fools, 23 and exchanged the glory of the immortal God for images resembling mortal man and birds and animals and creeping things.
This seems to indicate that no one will be able to say they didn't know what God expected from them. I believe God reveals Himself to all people and they are accountable for what God has revealed to them.
