This Kefir Soaked Granola is yummy! I used my Homemade Kefir. Soaking grains makes them easier to digest and better for you. Cooking it at such a low temperature makes it healthier also.
Put into a large
bowl ~
8 cups rolled
oats
1 stick melted
butter
1/2 cup melted coconut
oil
1 1/2 cup kefir or
yogurt
Stir well. Put a towel
over it and let it sit for 24 hours.
Heat in a small
pan on low just until warm ~
1 1/2 teaspoon vanilla
extract
1 1/2 teaspoon almond
extract
3/4 cup raw
honey
1 teaspoon sea
salt
1 cup unsweetened
coconut
Mix everything
together along with ~
2 1/2 teaspoon
cinnamon
1/2 cup dates
pieces
1/2 cup
almonds
1/2 cup
walnuts
Spread on two large
cookie sheets and bake at 170 degrees for as long as you want. I baked them for
4 hours and the granola was chewy. If you want it crispy, you will have to
bake it for a lot longer. I eat my granola with fruit and kefir for a healthy
breakfast. Now my granola will even be healthier!
